Vinification
Soft pressing of the grapes with immediate separation of the must from the pomace in order to contain the release of the coloring substance. Cleaning of the wort and fermentation of the wort at a controlled temperature. Storage of the finished wine in stainless steel containers.
Ageing
Before bottling, the wine undergoes refermentation in an autoclave to obtain the second fermentation. Bottling takes place after a period of maturation in an autoclave (three months).
Paring
Being a white wine, however, coming from red grapes, as well as an aperitif it can be combined with elaborate dishes of pasta, fish and white meats.
