VINIFICATION
Soft pressing of the Pinot Noir grapes in order to obtain the pale pink must. Fermentation of the must at controlled temperature.
Ageing
The sugar syrup and yeasts are added to the "base" wine in order to activate the refermentation in the bottle. The bottles are stored in a horizontal position for at least 24 months, during which the sparkling wine undergoes "maturation". At the end of this phase the disgorgement and the definitive corking take place. Bottle pressure 5.5 atmospheres.
PARING
Being a classic sparkling wine obtained from red grapes, it can be used on any type of course, including meat. It is absolutely not recommended to combine it with desserts.
