VINIFICATION
The grapes are harvested manually in small stackable boxes, ensuring high quality determined by the selection directly in the vineyard.
The destemmed grapes undergo gentle pressing followed by a brief skin maceration to allow for the extraction of a delicate pink colour characteristic of this wine. Subsequently, the first fermentation takes place in stainless steel tanks at controlled temperatures.
Ageing
A minimum of 24 months of bottle fermentation in contact with the noble lees.
6 months of bottle aging following disgorgement.
Tasting Notes
Being a classic sparkling wine obtained from red grapes, it can be used on any type of course, including meat. It is absolutely not recommended to combine it with desserts.
