Vinification
Soft pressing of the grapes with cleaning of the must and its fermentation at a controlled temperature, storage of the finished wine in small stainless steel containers.
Ageing
Addition of sugary syrup and selected yeasts to the base wine to allow refermentation in the bottle. Stacking the bottles in a horizontal position. Refermentation of the wine in the bottle and maturation of the sparkling wine on the noble lees for at least 24 months. Bottle pressure 5.5 atmospheres.
Paring
As champagne is an aperitif and throughout the meal, ideal with fish dishes, it is absolutely not recommended with desserts.
