Vinification
The grapes are harvested manually in small stackable boxes, ensuring high quality determined by the selection directly in the vineyard.
The destemmed grapes undergo gentle to obtain a high-quality free-run must. Subsequently, the first fermentation takes place in stainless steel tanks at controlled temperatures.
Ageing
A minimum of 24 months of bottle fermentation in contact with the noble lees.
6 months of bottle aging following disgorgement
