Vinification
The grapes undergo soft pressing, immediate filtration, refrigeration, and storage of the must at 0°C in stainless steel tanks with controlled temperature. After about 3 months, the must is inoculated with selected yeasts for fermentation in autoclave until the desired alcohol content is reached.
Ageing
In stainless steel tanks.
