    VINIFICATION

    Soft pressing of the grapes. Fermentation of the must at 16° C. Storage of the wine at a controlled temperature.

    Tirage and Aging

    After the second fermentation, the wine ages on the yeasts of refermentation for at least 36 months, then it is ready for the disgorgement phase. Bottle pressure 5.5 atmospheres.

    Perfect for aperitif, or throughout the meal. ideal for a fish menu.
