Vinification
The pressing of the grapes is followed by the fermentation of the must in contact with the marc for a period of 7-10 days. The composition of the must/wine in the racking phase provides for the presence of a percentage of sugar such as to subsequently allow the wine to re-ferment.
Ageing
The bottling of the wine is preceded by the refermentation of the same in an autoclave, in order to acquire the characteristic frothy appearance.
Paring
Excellent with cured meat especially Varzi salami, sausages, cotechino and zampone (stuffed pig trotter), stewed red meat and both fresh or seasoned cheeses.
