Pressing of the grapes and brief cold maceration of the skins in the must. Racking after 6/8 hours of permanence of the must on the marc with immediate filtration and refrigeration of the same. Fermentation of the must at controlled temperature. Conservation of the finished wine in small stainless steel containers for at least six months from the moment of the first transfer.
Bottling takes place within April of the year following the harvest.
Versatile wine in pairings. Given its freshness and softness, it can be offered as an aperitif combined with savory pies, prawn skewers, salmon canapés. The good body of the wine leads it to marry with fish soups, risottos with vegetables, white meats cooked with intense aromas, sweet creamy cheeses.
Pale straw yellow with golden highlights.
Intense, fine, persistent bouquet, tending towards fruity.
The taste is full, fresh, soft, very pleasant. The aromatic aftertaste is reminiscent of yellow peach and apricot jam.
