    The grapes are harvested in a state of overripeness and crushed after destemming. The must ferments in contact with the skins and grape seeds for 10/15 days before being drawn off and decanted into small stainless steel containers.


    In the January / February period of the year following the harvest, the wine is placed in small oak barrels where it "rests" for at least a year before being bottled.


    Given the body, the recommended pairings concern stewed or grilled meat dishes (game, game, beef fillets), aged cheeses. It is an excellent "meditation" wine that should be sipped from large glasses, possibly in good company.


    Organoleptic characteristics


    Deep ruby red with garnet reflections.


    Intense, fine, persistent bouquet. Pleasant vinous notes accompanied by aromas of ripe red fruit. The taste is soft, intense, full-bodied.
